Gamay vines around 40/45 years on JULIENAS. The vineyards are planted on granite soils on 12 hectare with a southeast exposure. The method of pruning is goblet. The grapes are harvested by hand.
All grapes are fermented in vat around 8 days with treading. The grapes, whole, are placed in vats for a carbonic maceration. Fermentation is conducted through a temperature control process. |
