The Merlot grapes for this single variety, were harvested in the Pays d’Oc, where there is now more merlot than in Bordeaux thanks to its huge success in such wines as this one.
The climate is a typical Mediterranean one. All vines are on hill-sides on clay-limestone soil with lot of shale, pebbles and fossils.
Vinification: after hand harvesting, de-stemmed grapes are put in vats and the cap is trod twice a day by foot during a 3 week maceration. A delicate pressing is made before complete malolactic fermentation.
