The sauvignon grapes for this single varietal were harvested in the pays d’Oc, where it develops a very distinctive style of dry white with a lot of personality in our chosen vineyard, but totally different to Chardonnay wines.
Grounds are mostly clay limestone and the climate is of Mediterranean type with some ocean influences.
Traditional vinification : Total de-stemming, short maceration before light pressing of the juices. Alcoholic fermentation.
